Ingredients:
- 1 cup dry potatoe flakes
- 1 cup boiling water
- 1 egg, beaten
- 1 teaspoon salt
- Ground black Pepper
- 1 1/2 cups all-purpose flour
Blend potatoe flakes and boiling water in a large bowl. Stir in egg salt and pepper. Blend in flour to make a fairly thick dough. Lightly knead on a floured board. Roll into a long worm-like strip and cut into bite size pieces. Place into boiling water. Gnocchi should sink in water and should float to the top when fully cooked.

Meat Selections 101
Beef:
- The more tender meat is in the rear of the cow. The farther back you go, the more tender the beef will be.
- Shoulders are large but tend to be very tough cuts and require pounding in order to acheive tenderness.
- Ribs and Brisket tend to have decent amount of fat on them but still slow cooking is still the best way to attack cooking these.
- Flank and sirloin are located in the rear half of the animal. #1 always buy top sirloin, the taste and texture will be worth the extra $2. Flank steak are delicious after marinating and placed on the grill or under a broiler when done properly
- Finally, the rump is normally passed up by most people but when found with a nice amount of fat and beef it could be the most tender piece of beef on the cow.

Midweek Meal
Quick and easy recipe to feed the family without braking the bank
Bake a large, fresh, trout fillet in a baking dish on 250 degrees for 25 minutes or until done. Serve with a basic mediteranian salad.
Mediterranean Medley Salad: Take all ingredients and toss all together in a large bowl
- 1 cup Red Onion
- 1 cup Cucumbers
- 1 cup fresh Tomatoes
- 2 oz. crumbled Feta Cheese
- 1/4 cup Kalamata Olives
- 1/4 cup torn Basil
- 2 Tablespoons Extra-Virgin Olive Oil
- 1 Tablespoon Balsamic Vinegar
- Pinch of Salt to taste
- Fresh Ground Black Pepper to taste

Healthy Alternatives For Dessert
Desserts are the easist part of a meal to just get carried away and let loose. With self-control and some pointers a dessert can stay healthy and still maintain those rich decadent flavors.
1. Grill Fruit and serve over Frozen Yougurt instead of Ice Cream
- Grill fresh pineapple slices, orange slices, lemon slices, or even peaches
- Serve with other fresh berries that are in season
2. Balsamic Vinegar Spiked Berries (toss it all in a bowl and let sit for 20 minutes before serving)
- 1/2 pint berries (slice if strawberries, cut in half if raspberries, blueberries or blackberries)
- 2 teaspoons sugar
- 1 teaspoon balsamic or red-wine vinegar
